Chocolate and Strawberry Cake

This cake is an interesting one, it has three completely different textures: Jelly, Creamy cheesecake filling and cakey chocolate brownie. There are three layers to this cake and each one is made separately. I did cheat by using a brownie mixture but I will try out homemade brownies when I make it the next time! The cake went down a treat with all my family, especially my brother therefore it must be a good bake!


Chocolate Brownie base

1 packet Betty Crocker chocolate fudge brownie mix

1 medium egg

3 tbsp vegetable oil

5 tbsp water

white and milk chocolate chips (optional)


Strawberry puree

300g strawberries

2 tbsp icing sugar


Strawberry cheesecake layer

360g Philadelphia cream cheese

300ml double cream

Quarter of the strawberry puree

100g white chocolate melted


Strawberry jelly layer

The rest of the strawberry puree

2 tbsp water

1 tbsp caster sugar

8g powdered gelatine



Chocolate Brownie Base

Pre heat the oven to gas mark 4.

You will need a deep non stick round cake tin, line the bottom of the tin.

Mix all the ingredients together and feel free to add some white and milk chocolate chips to the mix.

Pour the brownie mix into the cake tin and bake for 25 minutes until a knife comes out clean.

Once baked,keep the brownie in the cake tin and leave to cool. I put mine in the fridge to cool quicker.

Strawberry Puree

In a blender blend all the strawberries and the icing sugar until smooth.

Strawberry cheesecake layer

In a bowl mix the cream cheese and double cream together until thick.

A little bit at a time, gently fold in a quarter of the strawberry puree. Add in the melted chocolate and fold gently again.

Leave the mix to cool in the fridge.

Strawberry Jelly Glaze

In a small saucepan heat up the water and strawberry puree until warm but not boiling.

Add the sugar and gelatine and keep stirring until dissolved.

Once dissolved bring to a boil and then take the mixture off the heat and cool the saucepan in some cold water but make sure no water gets into the mixture.

Putting the cake together 

Whilst the Strawberry glaze is cooling, take the brownie still in the tin and add the cheesecake mixture on top, smooth and even the cheesecake mix. Once this is done pour the strawberry glaze on top and place into the fridge for at least an hour before taking it out of the tin and slicing up to eat.
