Baking: Scones

Plain Scones – Makes about 8

Scones are so quick and easy to make, I love this recipe and thought I would share it with you. Perfect for afternoon tea!


225g self-raising flour

40g butter

1 1/2 tbsp caster sugar

pinch of salt

140ml milk


Pre heat the oven to gas mark 7, 425’F, 220’C.

Lightly dust a baking tray with flour so the scones don’t stick when baking.

Sift the flour and salt into a large mixing bowl, add the butter and with your hands rub the ingredients together until the mixture resembles bread crumbs.

Add the caster sugar and the milk and mix with your hands until the mixture is dough-like.

Flour a work surface and place the dough onto the floured surface. Smooth and flatten the dough with your hands to a 3cm thickness and then cut scone shapes with a scone cutter.

Place the scones onto the baking tray and bake in the oven for 12-15 minutes.

Once the scones are a light golden brown remove from oven and place onto a wire rack to cool.

The scones are best eaten fresh with some butter or cream and jam.
