Baking: Victoria Sponge

Baking is something i love doing, although i find that i have to be in the mood for it. It’s great finding new recipes and making them your own.

This Victoria Sponge recipe is one i have been using for a few years now and it comes out perfect every time. My family all enjoy it and give it high marks!

Victoria Sponge


110g self raising flour (sifted)

1 tsp baking powder

110g butter (at room temperature)

110g caster sugar

2 large eggs

2-3 drops vanilla essence

To finish:

Strawberry jam and fresh whipped cream.


Pre heat oven to gas mark 3, 170’F, 325’C.

Line two 7 inch sponge tins with greaseproof paper.

Sift the flour and baking powder into a large mixing bowl, then add all the other ingredients and mix until all the ingredients are combined and there are no lumpy bits.       If the mixture does not fall off your spoon easily then add a teaspoon or two of tap warm water. Divide the mixture evenly between the two baking tins and place in the oven to bake for 30 minutes or until the sponge is golden and springy to touch.

Once the sponges have baked, remove from tins and place onto a wire rack to cool.

Whilst the sponges are cooling whip up some double cream for the middle of the two sponges.

Once the sponges are completely cool, spoon on some strawberry jam and the whipped cream and sandwich the two sponges together. Feel free to sprinkle some icing sugar on top just for extra prettiness!
